The Temperatures That Prevent Food Poisoning

Most household food poisoning comes from a wrong temperature, not a dirty kitchen. The numbers that matter, and why colour tells you nothing.

Most household food poisoning does not come from a dirty kitchen. It comes from a wrong temperature: food left out too long, or chicken that looked done and was not.

The problem is that dangerous bacteria do not change how food tastes, smells or looks. Your senses are not a test here. The numbers are.

The short answer

The danger zone is 5°C to 60°C, where bacteria multiply fast. Cook poultry to 74°C, minced meat to 71°C, and whole cuts to 63°C with a three-minute rest. Never leave food out longer than two hours — one hour in hot weather.

Two numbers worth memorising: 5°C and 60°C.

  • Below 5°C — multiplication is very slow. This is where your fridge should be.
  • Between 5°C and 60°C — multiplication is fast, potentially doubling every twenty minutes at worst.
  • Above 60°C — bacteria stop multiplying, and the kill rate rises with temperature.

Hence the short version: cold food cold, hot food hot, and nothing sitting in the middle for long.

Why is mince higher than a whole cut? Because bacteria live on the surface. On a whole cut, searing the surface is enough. Mincing mixes that surface through the entire mass. For the same reason, a rare burger is not the same proposition as a rare steak.

Colour is not a test

One of the most common kitchen mistakes.

Meat colour is affected by the age of the animal, the pH of the meat, how it was stored, and even the cooking gas. Chicken can stay pink while fully cooked, and can turn white before it reaches a safe temperature.

The same applies to "until the juices run clear" — an unreliable indicator that studies have shown fails in both directions.

The only decisive tool is a thermometer. Insert it into the thickest part, away from bone — bone conducts heat faster than meat and gives a falsely high reading.

The cheapest safety tool in the kitchen

An instant-read digital thermometer costs less than a restaurant meal and replaces all the guesswork. Of everything you can buy for a kitchen, it has the largest effect on safety.

The time rule

Correct cooking does not help if the food then sits in the danger zone:

  • Two hours maximum out of the fridge in normal conditions.
  • One hour if the room is above 32°C.
  • And the time is cumulative: an hour on the table today and an hour tomorrow is two hours, not one.

Past the limit, smell and taste are not evidence. Throwing food away is cheaper than the alternative.

Cooling matters more than reheating

A point many people miss: some bacteria produce toxins that heat does not destroy. So reheating can kill the bacteria and leave the toxin behind.

Which means what you do immediately after cooking matters more than how hard you reheat later:

  • Divide large quantities into shallow containers — a deep pot stays warm in the middle for hours.
  • Get it into the fridge within two hours; do not wait for it to cool completely on the counter.
  • Cover it once it has cooled a little, not while it is still steaming in a deep sealed container.

Cross-contamination

The second risk after temperature — bacteria moving from raw food to ready-to-eat food:

  • A separate chopping board for raw meat. If you only have one, cut the vegetables first, then the meat.
  • Do not wash raw chicken. Washing sprays contaminated droplets across the sink and nearby surfaces, and removes nothing that heat would not.
  • A clean plate for the grill. Cooked meat never goes back on the plate that carried it raw.
  • Wash your hands between handling raw and ready food.

Defrosting

Defrosting on the counter is the most common error: the outside spends hours in the danger zone while the middle is still frozen.

Three safe methods:

  1. In the fridge — slowest and safest, needs planning ahead.
  2. Under cold running water in a sealed bag.
  3. In the microwave, provided you cook it immediately afterwards.

The practical summary

Five numbers cover it: 5 and 60 for the danger zone, 74 for poultry and leftovers, 71 for mince, 63 for whole cuts and fish. Plus two hours maximum out of the fridge.

Follow those and you avoid most of what happens in home kitchens — which is usually not a hygiene failure, but misplaced trust in the eye.
