A baby hat is the classic first baby project: quick, small, and useful from the first day. It also fails in one specific way, and the reason is a single number most patterns do not explain.
A newborn head is about 33–36 cm around. Make the hat around 33 cm circumference and 14 cm tall — deliberately about 2 cm smaller than the head. That is called negative ease, and it is what makes a hat grip instead of riding up and falling off.

Head circumference is measured around the widest part, just above the ears and eyebrows.
Note that the hat column is always smaller than the head column. That is not an error.
Negative ease, explained
A hat that measures exactly the same as the head has nothing to hold it on. The fabric sits at its natural size, and every time the baby moves the hat travels a little further up until it comes off entirely.
Making it around 2 cm smaller means the fabric is under slight tension. It stretches to fit and grips gently.
Too much negative ease is also a problem — a hat that leaves a red mark is too tight. About 5% smaller than the head is the useful range: 2 cm for a newborn, a little more for a toddler.
Working out where to stop increasing
A crochet hat is a flat circle that turns into a tube. The only decision is when to stop increasing.
The rule:
Stop increasing when the flat circle's diameter equals the hat circumference ÷ 3.14.
For a 33 cm newborn hat: 33 ÷ 3.14 = 10.5 cm. Crochet the circle until it measures 10.5 cm across, then stop increasing and work straight down until the hat is 14 cm tall.
That is the whole construction. Everything else — stitch pattern, brim, colour — is decoration on top of it.
Top-down or bottom-up
Top-down, starting from a magic ring at the crown, is the usual method and the easier one. You can measure the circle as you go and stop increasing at exactly the right point.
Bottom-up, starting with a band, suits ribbed brims. It requires getting the circumference right at the start, which is less forgiving.
For a first hat, work top-down.
Safety, briefly
No ties or drawstrings. Anything forming a loop or cord near a baby's neck is a strangulation risk. Commercial childrenswear removed neck drawstrings for exactly this reason. If a pattern includes one, leave it off — a correctly sized hat does not need it.
No pom-poms for a newborn. They shed, and they can be pulled loose. Save them for a child over three, and sew them on properly.
No buttons or beads.
Take the hat off indoors and for sleep. Overheating is itself a risk factor, and a hat that is right for a walk outside is too warm in a heated room.

Yarn and hook
Worsted weight with a 4.5–5 mm hook is the standard combination, and works up in about two hours.
DK weight with a 4 mm hook gives a finer, softer hat — nicer against newborn skin, and slower.

When you cannot measure the head
Common, since the hat is usually made before the baby arrives.
Make the 3–6 month size. A newborn hat fits for a few weeks at most, and babies vary considerably. The larger size gets worn for months, and a slightly big hat is a much smaller problem than a hat outgrown before it was used.
For charity and hospital donation, check the requested sizes first — most units ask specifically for preemie and newborn, and often specify the yarn.
